Not too hard mate, some salt, curing salt (preservative) lard and good quality pork plus a reasonably cool place to hang it or plenty of room in a fridge that is kept on its warmest setting.

You are correct, it is encased in salt for a period of time (based on weight of leg, about 2 days per kg) in a cool place with a weight on it to help it compress and drain. Once time up in salt you wash it, wipe lard over the meaty section to seal it off, press pepper corns or dried chilli (or both in my case) and wrap it in muslin cloth and hang in a vermin proof box out of direct sunshine where it is protected from the elements and wait for 6 to 12 months. I will take some photos etc and past in the general section

Ahh half way through wiring up my camper and tidying up the setup with truck trailer wire nice 7 core 35amp each wire much tidier than individual wires and I'm putting it all in PVC conduit when its under the camper. Few more hrs and I'll be set !

Good to hear mate, I know how you feel.
My wife has had several operations on her eyes and the injections are horrific. Don't know how she put up with them but the alternative was even worse, been about 12 months now so fingers crossed.

Further to my post in the 'Angry' thread a few days back about my wife hitting a rock & losing oil from the bottom of the motor in her Mitsubishi Mirage, it is now sorted.

Bad news is that it wasn't the oil filter, or the sump pan, but was actually the sump itself.

Good news is that wife had already booked in to the workshop for an oil change which was going to cost $100 with her supplying oil & filter (which was cheap compared to ther places she enquired at!) & they quoted her a total of $350 to replace the sump with one from a wreckers & including the oil change. Apparently the Mirage construction allows for easy replacement of the sump, unlike on many cars where the cost can run into the thousands.

Even better news is that when she went to pick it up the bill was less than the quote, at $267 including the oil change, & a service! Can't complain about that. What a shame that we find a good & reasonable priced mechanic in Traralgon, just as we've moved to Ballarat. For anyone down that way it is MacDonalds in Mcmahon St.

The Racv looked afer her well too. With no hire car available on Monday they put her up in a motel in Traralgon overnight, with a taxi to the motel, & again to work the following morning, & then provided a hire car for two days all at no cost. Wife was pleased that she had already informed Racv of our change of home address, they knew she was still working in Traralgon & staying at friends next door to our old address, but were more than happy to provide the service.

Considering we were talking about the possibility of having to replace the car because of the damage last weekend the actual outcome was unimaginably good.

After a slight mishap (changing the stubby stick from H4 to L4), I finally got my 8 stitches out and have to take MORE time off to assist in recovery and watch my nail change back to clear with a pink underlay. lol

Yeh I came down crook thursday night and fever just got worse. Blood test were in this morning and so far its just a mild fever.
Worse feeling ever could not even lift my arms up and had a temp in the low 40's for a long time , sheets were drenched with sweat.
Hope you get over it quick its a nasty thing to get and can take a long ,long time to get out of your body

The Gq developed a loud rattle in the motor on the way home from shopping...(new head about 2000klm ago )...exhaust chuffing etc ...by the time I got home it sounded like a rattle gun !...I was just waiting for a major hernia in it before I made it..thinking it had possibly dropped a valve and having to go through the pull down again....turned out to be only a loosened rocker ??...push rod was ok so assuming lifter ok also (well hoping so lol)...so only have to set the gap again I think at this stage and check the others .....very happy today under the circumstances.

The Anti-Biotics have kicked in and I don't feel like ripping my tooth out with pliers. I got given some old but usable cladding to re-roof the goats' shed. To top off a great day, my son has learned how to change gears without popping the clutch in the Old Trol.

Needed to fill up the tank on the wife's car so I checked the fuel watch website 1 place selling petrol for $1.439 the next best in the area was $1.579. Pretty happy I checked the website.

Ordered a new compressor and kit earlier in the week which arrived today. Have a chance to install it over the weekend now. :)

How are you finding Ballarat Cuppa? Are you closer to town than you were down here? Are you still on land or just a town house now?

Only 10 minutes from town, but on only 2.5 acres. Close enough to neighbours to hear their bloody dogs howling at night! Ballarat seems like a pretty good place, still finding my way around but I like it, it seems friendly & with a lot more on hand than Traralgon/Morwell. Our new place is ‘suburbia’ compared to our last place, but it’s still ‘country’ complete with a current plague of rabbits. Gonna have to sell my .22 magnum & shotgun & replace with either a standard .22 to use subs, or maybe an air rifle. The current firearms would be loud enough to freak out the neighbours. Something quieter will be the go.

Any of you gun toting 4wd’ers have any idea what a lever action Ruger Model 96 .22 magnum with scope & 9 shot magazine might be worth?

The best thing is how good the treps are with the modified tread pattern, the amount of sideways traction has improved 10 fold. So impressed that my next set of treps will be modified before they are fitted to rims :smileyvault-cute-bi

Today has been an excellent day so far!
First thing was I took my Patrol to Nissan for a 50,000Km service. This car is the first second hand car I have bought in a lot of years and it bothered me there was no warranty in case I had overlooked something when I inspected it before handing over the $$$
When I was picking the car up after the service, we were discussing warranty matters in general with the Service Manager when he sais, "you don't have to worry, your car has the Nissan Extended Warranty"!
It came out that the previous owner had purchased the Nissan Extra Time warranty so I have a new-car warranty till mid-May 2015! :bigthumbup:
Can't beat that. I hope there isn't a clause in the fine print saying it's non-transferrable to a new owner

Anyhow, when we left Nissan, I dropped into BCF to try to bargain them down on a Waeco CFX40 and they wouldn't really budge down to what I have seen online. The guy then showed me an Engel MR40F (the one with the plastic casing) and gave a good discount on it for me as well as throwing in the insulated cover. :bigthumbup:

Do days get much better than this? :thumbup:

Got up early this mornin quick trip down to the coast for a surf got the scar from the hernia op in some salt water figured it would do some good. Then went up to the surf club an had a big pile of bacon an eggs to keep the colesterol up. Was gettin a tad low. Back home by 11 am an then had a nice sleep before the missus gets home from work. and only as I rang yesterday. Seems my case manager is of the some thought
as me as this has taken far to long to sort out. He is going to follow it through and get back to me

Just had to change an idler-wheel bearing on the engine of my troll.... thought it was going to be a mission (I understand Human Anatomy better! So not mechanically minded...) Ended up costing the princely sum of $5.34 and was easy to replace. Makes you feel so good when you can fix something yourself.

Saw the work / insurance orthopeadic surgeon today, far better experience than previous times / quacks.

He is making some recomendations that will hopefully be approved and acted on to get some relief for my back.

Still no op but injections are on the cards as he wasnt happy with how I was nor the amount of time I have been on these strong painkillers with nothing being done or getting better

A few people round here have pigeons and after the bushfires of 2009 we had a lot of predator birds in the area..... I watched one munching on a pigeon on top of the power pole out the front..

But to have one right there on the ground and I was 2m away from it was so cool to see.

Went and had a day out at Sth Melbourne Market.
Had delicious Octopus for lunch.
A beautiful coffee and cake.

I also went to the fish monger and bought 2 x John Dory fillets which cost me $16, but I told my wife it'll be worth it.

I skinned and portioned and crumb the fillets and deep fried them to perfection.

My missus cannot stand eating fish or seafood and was giving it to me about spending do much on two fillets.

I asked her to just try the John Dory, as it's one of the best table fish.
Which she tried it and low and behold she ate a whole fillet. Unbelievable.

I had almost forgotten how good John Dory was/is.

Finally back from my Taiwan junket at 6am this morning......
3 hrs sleep on the plane, I'm totally shagged and feeling that if I had to look at another drink in the next month it would be too soon. I think I've had about 24 hrs sleep in the last 7 days and though it was a fun trip, just really happy to be home and hanging with my family.
Travelling in Asia always makes me appreciate the wonderful country we live in and why so many try to make their way here.....

But what really made me happy today was havin ol Aggie in 4L for a few hours today.
Aaaaand with my lil 4 yr old who only sqwaked once when she bounced her head off the passengers window :)

Was that the sleeping pic you took?? And she really was just passed out from the knock..

Looked good anyway, I'll have to brighten patrol next time we're up and go for a spin..

When you drink it you should decant it carefully into a carafe and let it sit for a couple of hours first as it will probably have some sediment.
A vintage port is very different to other ports and should be treated like old wines.

Mate I used to get 20 ltrs of 26 yr old port from a private winery up in Clare Valley.
Had to stop getting it because it was sooooo yummy and emptied my 20ltr oak barrel way to quickly.
Im with you skull skull skull!!!!!!! Ya not a real man if you don't :)

10bux is just old vinegar by now. Last year I had the pleasure of drinking a 1968 Yallumba Claret. Was very lucky that is was still good as the other five bottles we has were shite...
