Are we still talking Noosa river, if so, I've seen 3 smallish bull sharks under the bridge at the Sheraton hotel smashing up a massive school of bait fish. It was very early in the morning like 5:30am and it was brutal.

I've also seen hundreds of cat fish heads floating in the river after something has had a frenzy.
It was extraordinary to see.
And I mean hundreds. They were everywhere, right across the river.

That could also be Dolphins (not sure if they are in the Noosa River), I've seen a documentary that showed Dolphins doing exactly that to catfish. They are very clever, I saw a couple working the giant cuttlefish between Point Lowly and Whyalla and they basically flipped the cuttlefish bone out of the body before eating.

Yeah, now that you mentioned it, I believe the local tackle shop told me the same thing, that it was dolphins.
But I have never seen dolphins in the river and I've been to Noosa15-20 times.
