I got a belly yesterday to do in the oven tomorrow night, not game enough to try it in the smoker yet.

Yeah I've cut the skin off and have it drying out in the fridge, I'll give it a blast in the air fryer later on.
The cook is low and slow which gives terrible results from pork crackle. Once these cubes have smoked for a couple more hours, I will put them in a tray with some BBQ sauce and a couple of other things to braise in for another hour or so. Can't wait!

Can't wait for my new smoker to arrive. I am fed up with playing with this little fire all day. It gets great results but requires much more effort than a bigger offset smoker.

Tasted pretty good! Perhaps left in the smoke a little too long initially and should have thrown in the braise earlier I reckon.
It ended up being super tender and sticky delicious.

GOD, that looks delicious. Beats my tuna a la king and rice meal hands down tonight. Worth breaking lockdown and running the gauntlet for a feed i reckon!
