We did aldi pork ribs last night and they weren't that bad, not as good as what we get from the butcher but half the price.

Try the foil from the BBQ section of Bunnings, it is ultra thick and so good to use. Just watch out for the sharp edges cos they cut fingers easily!

Unless something magical happens in the coming days I’d suggest heaps more chilli and maybe brown or apple cider vinegar possibly, how long does ‘pickling’ usually take folks?

My daughter is cows protein intolerant, which is different to lactose intolerant. It means even the lactose free options at the supermarket aren't an option.
I wanted to make her a carbonara for dinner tomorrow night and to be honest the cornflour, butter and plant based milk beschamel has never really done it, the texture isn't that lovely creamy you get when using actual cream.
So I got creative tonight, and used a technique I picked up from an Indian recipe to quickly blanch some almonds, then deshelled and food processed them up. Threw them into a pot with some almond milk and garlic then stirred for a while till it reduced and thickened. Put it back in the food processor and blended some more. The end result is magical, it is super thick and creamy, pretty close the the real deal, can't wait to help her eat it tomorrow night.
Also hope this helps anyone on here who is in a similar situation or even vegan.

no mate its a bugger. sorry was on phone should have clarified. pretty much no dairy, with the exception of cheese. soft cheeses will upset her tummy too. no cows yoghurt, its fortunate there are sooooo many plant/nut based probiotic yoghurts on the market these days. for milk she usually drinks soy as its pretty thick, but almond milk is preferable as its higher in calcium, unfortunately it is also alot waterier so if we do give her a bedtime bottle she will soak her nappy, rather than retaining it like the soy. its a tricky situation, but once we know the boundaries it was easier to manage. its not a huge change for us anyway, tegan is lactose intolerant, so we were already halfway there when it came to diet sensitive persons.
fingers crossed she grows outta it, although because of mums diet sensitivity its pretty unlikely.

Reckon I’ve nearly nailed the cooking times and temps in the old Hark now:
#30 minute warm bath in Apple Juice
#15 minute hot smoking fully exposed @150C
#3hr slow cook fully exposed @100C
(Basting with Apple juice from the steam bath below which catches pork drippings also every hour)
#Removed, added the sauce mix and fully wrapped in Winnie’s super thick foil tightly.
#3hr slow cook fully wrapped @ 100C top shelf.
#Removed, unwrapped and added more sauce before putting back in fully exposed again for a final 15 minutes @100C

Been thinking about this today, and there are harmful agents in the timber, regardless of whether its wet or dry. The one that comes to mind is creosote. This is the stuff that builds up inside a chimney if you burn unseasoned but essentially dry wood. The issue is the heat generated by the fire. Under a normal dry wood combustion, the heat is sufficient to burn the creosote, but green or unseasoned does not burn as hot, so vaporises and is carried up the chimney where it cools and sticks to the flue. I set fire to my chimney one year after years of collecting my own firewood, then a mate got me a cubic meter of chep pallet 4 x 2's and the heat had the chimney burning like an afterbourner, but filled the entire house with smoke as well.
For the smoker though, seems the opinion at least in the US forums that green is fine - burns at lower temp, but then again the chips as i have also purchased for the camp ovens are always bone dry and bark free, regardless of the tree type - dunno, maybe its one of those cases of avoid to be sure?

It's sold at Bunnings in the BBQ section. $10 a roll but it is easily 3 times as thick as the standard kitchen variety alfoil. Great for wrapping meats, because of the strength of it, it's really hard to tear and leak all your precious juices out.

Less coals or a couple of logs under the base to prevent it burning.

Once it was out in the open air it did dry up a little, which it needed, taste was same as the others.

I can highly recommend tack welding on some nails for holding your ribs upright like in post #807 can also stab potatoes, chicken drumsticks on the nails too or lay a full slab of meat atop of the nail tips as well [emoji39][emoji736]

A Convection oven at 250 deg C, as I don't have a pizza oven or a woodfire oven....yet, I find the secret in a fresh cook with fresh dough is max heat shorter duration. Time varies between 12 to 15 mins (one pizza at a time as that oven is only good for a max 15" diameter pizza on shown tray on a rack that lifts it 3" up from the rotating plate) depending on how much cheese anf topping I used. I always use the 3 or four cheese pizza mix, and once she goes golden on the crust, you in business!

When you do get the wood fire pizza oven you'll be able to fire it up to around 300-325 and it's about 5 minutes in and out..

He had a 44-gallon drum cut in half and use this area for a spit. The top of the hood as a flute and a whirlybird on it. I made up the bit of stainless and fitted one fan, if I can get all the smoke out through the little extraction fan great, if not it's offset for that reason to fit a second fan.
What's Coles charging per kg? Wouldn't mind seeing if that's a difference between the local butcher and the supermarkets.

Looks very well seasoned without being over the top like most youtube/Facebook smoker experts we see lately, appreciate good seasoning but let the meat speak for itself to a point.

Very true about the local.
The seasoning was a fluke, I mixed the same amount of rock salt with the last of the black pepper added some smoked paprika and that's how it came out.

Three hours in and we're at the stall stage.
Temp has been very stable 120-140. It seems to work better in the old spit pit. I put up a board across the front to help with the smoke, another fan and I'll replace the board with a piece of stainless and it should force the smoke up. Yeah its good to let the meat rest after cooking but that is the only reason for the esky, eskies are just as good at keeping things hot as they are at keeping things cold.
I find it really hard to estimate what time a piece of meat will be finished so I usually put it on early and let it rest in an esky until ready for dinner.
I have had a bit of pork rest for 4 hours and still come out finger burning hot.

Been buying these for ages too, and yes they're great. Tonight, cardinal sin, no bread in the house and burgers planned. Had a couple or three drinks this arvo so no driving down for an emergency bread buy dammit. Is mac and cheese actually edible?? :DSimilar to your Bechamel lasagne topper sauce mate, make the roux with flour and butter, add milk and a SHIT LOAD of cheddar cheese, add cooked macaroni, top with bread crumbs and whack it in the oven (or smoker for extra extra flavour)

Pork belly and veg tonight and I didn't have to do anything.

Oh nice, I haven't tried jerky in the smoker yet. I've made and used "liquid smoke" while cooking and just put that in the marinade for the dehydrator but I wouldn't be the same.

Yeah I forgot to take pics in the end but they were bloody unreal! Lots of tendon and other inedible bits to pick through but not bad really. Those 2 shins cost me $50 and got enough meat to feed 6 adults, 3 kids and we have leftovers.

Haha no pressure eh? Cut slits in the fat about 1cm apart. Lotsa salt and rub in with oil. Into a really hot oven to crackle up then drop temp to roast the meat. Exact temps from others more in the know than me or googs.

After it's done pull the crackle layer off and scrape off the soggy stuff underneath. Bit of a gut puncher if eaten. Serve crackle as a side.

The skin should have cuts in it already, rub the skin with oil and heaps of course sea salt don't be shy. Cook for about 40 minutes or until the skin blisters. I've sometimes taken off the skin at this point and reduce heat to around 180 for about an hour (depending on the size of your pork) and then crank it up to that 240 odd for about 5-10 minutes with the skin back in and while the meat resting.
You probably will get some rubber tasting bits and some really good crackle, but hey who doesn't like some nice moist pork..

Lol no. I cooked it Christmas morning. I just wasn’t paying attention more to the fact.
This new fancy oven we have, it’s got a pork roast cooking function. All we do is set the cooking temp per kg on the oven, put the temp probe in the meat and plug that into the oven and leave it. It cooks at a high temp for 20 minutes then auto resets the temp down to a cooking temp and turns off when the temp probe gets to 75c.
The meat came out great but I should have removed the crackling as you suggested.

OK so every Thursday night the local has Parmi night - 33 parmis and buy one get one for $5. So naturally working away, my workmate and I head along for a good feed at a great price.
So far I've partaken in the following Parmis:
- Satay Parmi: Great!
- Carbonara Parmi: Bonza!
- Lasagne Parmi: Beaut!
- Texan Parmi: Unreal!
- Traditional Parmi: Good of course!
- Mexican Parmi: Aye Carumba!
- Meatlovers Parmi: Ooh yeah!
- Bolognese Parmi: Magnifico!
And so what to choose tonight? Hmm.....I've seen this on the menu but nah, no way mate. Never. Nada. Not for a million bucks. Never in a million years.

Simple pleasures for simple people. Tonight: Jaffle night :)
Recently sought and bought a round jaffle iron. Haven't had one for many years so thought time to cook round sandwich pies again!
Of course the first firing of this iron has to be with the all-time champion of cheap camp cooking.....the master of gut disaster.....the legend ingredient of first time campers and cheapskate gourmands worldwide.....Braised Steak and Onion (aka Human Dogfood)!
So here's tonight's lineup:

I'm normally a wholemeal or multigrain type of guy, but hey, if we're going down to the level of Braised Steak and Onion jaffles then it's gotta be white bread.
First jaffle: Bit of cheese, bit of dogfood (I mean Braised Steak and Onion), a bit of cheese and close it up.

On the heat for a bit, flip. Bit longer, flip. Bit longer again, flip. Bit longer OK should be good to crack it open. Looks good!
