That's completely normal mate, it's called the stall. Depending on how much time you have, you can either ride it out for a few hours, or tightly wrap in a few layers of foil to speed the process up.
Without knowing the details I'd suggest you need to wrap to have it ready for dinner. You will lose a bit of the bark but will still have the delicious smokey flavour.
I'm no good with words so do some googling of "the stall" to understand it better. If you are prepared for it, it's no problem.

I kept half of it, vacuum sealed it and am going to simmer it in a pot of water for a few hours to hopefully finish off the cooking tomorrow.

Picked up my Bunnings order charcoal lump, wine barrel smoking chunks and a matador smart meat thermometer. Then onto the butcher 1.6kg of brisket.
While the smoker was getting up to temp I season the meat. I read somewhere to check the smoker gauge against a thermometer. I did and you can see the difference.
During the cook I tried to maintain around 170 degrees Celsius on the gauge which was actually 130. It did range from 100-220 (gauge).
Once it got to an internal temp of 95 I let it rest for an hour and then cut it up.
I couldn't wait I cut the first piece as soon as it came out of the smoker, that wasn't juicy, but not dried out either. After the rest the whole thing was juicy and moist, a little to much black pepper on some parts and not enough of the wine barrel favour, could still taste and smell it, but a little more would've been nice.
For a first attemp everyone enjoyed it and there wasn't any left. As a back up I got a kilo of Italian sausages, the fire box was still hot enough so I cooked then there. Plenty left over for lunch tomorrow..

FWIW: When it comes to ribs, either request your butcher to remove the inner linings or do take that extra time yourself to remove.
Couldn’t be arsed this time around as too busy and that really does appear to affect overall smoke and heat evenness!
Better preparation like anything is key [emoji106][emoji106]

Yeah I've cut the skin off and have it drying out in the fridge, I'll give it a blast in the air fryer later on.
The cook is low and slow which gives terrible results from pork crackle. Once these cubes have smoked for a couple more hours, I will put them in a tray with some BBQ sauce and a couple of other things to braise in for another hour or so. Can't wait!

Can't wait for my new smoker to arrive. I am fed up with playing with this little fire all day. It gets great results but requires much more effort than a bigger offset smoker.

Tasted pretty good! Perhaps left in the smoke a little too long initially and should have thrown in the braise earlier I reckon.
It ended up being super tender and sticky delicious.

Air fryer crackle is so easy. Dry out with salt uncovered in fridge for a few hours, then in the air fryer at 230C for 20 mins.

That is just one of the Woolies slow cooked jobbies, Looks better then it tasted. :( It did fall apart though when i tried cutting into it... just a weird flavour.

have done some sort of meat in the oven with coke a while back. its scary how all the colour dissapears into the meat, and youre just left with a gross oily looking fluid. honestly sticky coke ribs are amazing though. im pretty sure thats what i did years ago lol.

Sent from my iPhone using TapatalkHonestly it's quite easy, you slice the onion into eighths but not the whole way through, snap the bits holding it together, then batter and fry. It's messy work to get the batter between each petal but honestly they are amazing. You serve them up with some aoli, as the pic shows and pull the petals off as you want. They are like an awesome onion ring chip... Yummmmm

Yo rusty, I know about Dianne sauce, it's my favourite [emoji1786]. I'll see your pic and raise you this more thorough description:
As your pic says, it's named Dianne after the Roman goddess Diana. The reason is that Diana is the goddess of the hunt and is usually depicted with a deer. The sauce made in newyork was traditionally served with venison and called Diane by association.
I was asking if winnies Dianne chicken was in fact the same Dianne sauce and my God I'm now very interested [emoji1786]

This grill is incredible. Push button start and forget about it. Have taken the kids to the park while it's going and no need to worry about temps while I'm out.

They were in the smoke for 3 hours, they'll be in this bath for the next 3 hours and then I'll seal the tray up for 1 more to finish them off. Will make gravy with the juice and serve with mash potato and keep some to make tacos during the week.
In the tray is salt, red wine, and didn't forget a dollop of tomato sauce for sweetness and that extra tang.

MB, I reckon you want to put your flavours on earlier ie, give those slabs a good rub down with your garlic, oil, seasoning and rest them in a baking dish for a few hours in the fridge. I even drop some onion and herbs in too. Then of course have it out coming up to room temp for half hour before cooking, scrape the onion and bits off, cook steak, then drop the onion etc back on it one min before it come outta tha pan [emoji1786][emoji1786][emoji1786]

Not sure mate, might have a go at a brisket :)Truly recommend something a bit easier earlier on. Brisket is so hard to get right. I've tried 3 times and haven't succeeded yet. Has always tasted good but been tough or dry at the point end.
Pork shoulder or lamb shoulder is hard to get wrong and tastes amazing.

So had the day off yesterday as Seth ( my son ) twisted his ankle at school on Wednesday arvo and I had 2 take him 2 docs just 2 be sure it wasn't fractured as it was still hurting him at 3am and still at 6am when I was getting ready 2 leave for work.....so decided 2 fire up the new offset smoker and throw a small 1.6kg brisket on.... 7-8 hrs later... oh so yum in my tum and left overs :)
It was againt's Poo Bears advise I know, but it was about 25 bucks so no biggie is I stuffed it, not the usual brisket, my son is not a fan of anything with a hint of heat / spice so most rubs where out, I've been a big fan of the honey soy ribs from my local IGA so asked if I could get a Honey Soy brisket made up, not knowing how it would work but decided 2 give it a try.
Damn, so tasty, would definitely do it again with that flavor :)

Beautiful design, one piece, probably cold formed or maybe induction heated then formed as part of the process, material selection obviously the key, laser cut profiles, then surface treated, love it. The trick with the design is in the reduction of heat transfer up the handle no doubt, but I reckon if left long enough they might get a bit hot to handle as there is no visible insulator unless they apply something to the handle that we cannot see. Like any pot with a handle its a PIA to pack so for me I like a frypan with a removable handle but each to their own.. I would buy them simply because of the Aust success story and effort to bring the idea to market and these type of innovators need to be supported I reckon or we will be using the same gear with all its limitations for years to come.

When working at the Alice Springs abattoirs years ago we put
the beef cheeks in a seal plastic bag with a pinch of salt. Then
we just left it in the knife sterilizer. [ boiling water bath].
Come smoko awesome poaches beef cheeks.
Also from the Abs I collected all the bull bags I could.
Back home I emptied them out ,stretched them over a gas
bottle valve protector. plenty of salt and sunshine. wash
re apply salt and repeat.
Final stage was turn them fur side out and wait to dry completely.
Grab a new polystyrene insert , and there you have a genuine
Bulls ball bag stubbie holder, sold them for $20 a pop . So if you brought
one back in the early 80s I was the guy. One of my friends at the time
invented to spring loaded hat holder, But beef cheeks are to die for lol TD

2 cups of red
1 cup of chook stock (didn’t have beef on hand)
6 sticky things if fresh thyme
4 bay leaves
Brown the cheeks salt n pepper em first
Sautéed everything except thyme, basil leaves for 3 minutes
Put the veg in the slow cooker and the browned cheeks on top
Simmer the red for one minute
Pour over the cheeks and add the stock, thyme, and basil.
Cook low n slow for 8 hours (I’ll see you in 8 )
Sensational!

Twas truly a Team effort Chrisso Mate!
Must honestly say though, young Mate was mentally and physically Fair Dinkum exhausted afterwards, perfectly (deliciously) temperature righting racks forward and back throughout two barrels all morning. Temperature gauges up/down galore, he even kindly educated us how as the ‘racks’ shrink throughout the process and the hot air factor within changes too!

Not looking at any more of these delicious food pictures for a few days.
Just finished four days of festive eating. With the kids spread from here to W.A. it’s impossible to get them all together at the one time. Some of the local ones were either working or on call on different days over the last few days, this meant we had to be adaptable.
Xmas lunch local, Boxing Day in Geelong, then the next two days at our place with others as they were available, including one inter stater.
No pictures, but some beautiful meals were had. Happy to say I paced myself but looking forwards to pumping out about 3km in the local pool when it opens tomorrow morning.

Haven't eaten it hot though, only cold on sandwiches. I do love the idea of a hot smoked silverside with mash spuds for dinner though.

I preferred the rabbit but would go the duck any day.

Ouch. Honestly got no idea why they put hot chooks into a sealed plastic bag??? Just goes sloppy and horrible. Better back when they put the cooked chooks under heat lamps, nice and crispy, then into foil paper bags when purchased. Everyone jumps up and down about plastic bags these days but they dont demand senseless plastic bag use be stopped? Even the bloody iceberg lettuces are individually plastic bagged at Aldi. What the absolute Faark?? Every single lettuce in plastic bag.....
