May I also recommend these little ripper cast iron additions to your tucker arsenal in Phil's oven mate! The iron crock pots hold a single serve Osso Buco slow cook stew cut and the mini frypans can do leg ham & egg cupcakes with tobasco/parmesan topping for breaky, delicious:-)!!

These look great, excellent ideas. Regards the temp probes I initially discounted their use as I used IR probe, however I still need to open the oven door to do the reading. I thought about putting a 6mm hole in the oven box so a probe could be slid in to contact the pot or just measure the oven temp, but was unsure on how much smoke I would lose. Might be time to start playing around again and get a probe integrated. My hesitation with the greasy probe scenario is purely if the glass breaks and shatters, and you don't pick that up - could end up with glass in pizza - not a good thing.

How do you get the charcoal 'started'? Are heat bead lighter blocks sufficient? Who sell Charcoal as opposed to heat beads - can't say I have seen it domestically?

I can get charcoal from local chicken place @ $30 a bag.
A mob in Richmond sells it buy the bag, I use it to blacksmith stuff

How do you get it started? Does it need a lot of forced air as such or does it burn 'in ambient conditions'?

fire lighters get it started, and just ambient conditions do the job.
Back in the UK, we pretty much only had charcoal for bbqs, heat beads weren't common and gas was way to expensive for the common folk. It was quite an eye opener here to see a gas bbq cheaper than a kettle bbq when I first came over here.
