I spoke with a Pod builder over here in WA and they have some sort of fast latch system but it costs extra otherwise they bolt them down.

Normally bolt them mate, you could use catches but believe they aren't as strong as bolting them and with a pod loaded up with weight why risk it considering it would only take a few mins to bolt on...

over centre catches similar to a rear wheel carrier but smaller would work.
