I have drilled the bolt and used a castle nut and split pin.
You can buy security bolts, allen heads with the pin in the centre
Mind you the allen key costs a small fortune
Unless you spend about $40 bucks on the fasteners nothing much works against a full on thief but tamperproofs deter the opportunistic ones that only have a shifter or a multi tool
$20 (or free to shop lifters) gets you a set of drivers for almost every common security bolt in use, tri-wing, security torx, security allen etc

I use Lightforce security nuts on the spotties and the light bar is on the roof so a pain to steal. The Lightforce ones are good but someone with a pin driver and hammer will remove them with some effort and noise.
I have them as well...........
wont stop someone with time and patience, but will stop little sods thinking they can get away with it
I lost my reversing spots off the back of my car a few years ago, they are now double nuts with locktite 406 and something else..........:smile:
You could mount a truck battery in the back for sole purpose of making your nuts and bolts live, would deter people from trying again
Or put a extension cord that you can hide, plug in to 240v over night sometime touches it it's going to hurt and they won't do that again
Maybe even drill a small hole in the end case of
the light bar and use some loc wire as a deterrant
Only set it when going to bed and make friends with a pig farmer problem solvered lol
