Sorry Drew there is no easy way out mate. Getting someone in and they will have the same trouble, your seats are in the way of getting it shampooed

I had to remove seats all floor coverings and hose out
Floor coverings never made it back in they were fubar

If you hose out I suggest to take the ECU out first and protect all the plugs

Once the seats are out, how easy is it to get the carpet out?
I had an old Beemer that needed the carpet to come out as a leak had soaked the underlay. That was a c&$t of a job! Had to cut the carpet 'cause it was fixed to the firewall behind the heater core where I couldn't get to it.
I'm guessing the GQ is a bit more functional though.

Center console is a pain and the back as you have draws...
Take the seats out, take off some trim pieces and it just lifts away!

Yeah not that hard. You never know someone may well have had it out in a previous life. If its one big piece than I recommend cutting it across the car under the front seats and then you can remove the front section and deal with it and then the centre section in one piece to.
If you have drawers then remove them and take the carpet out and leave it out. Refit your drawers without the carpet.

The funny thing was that you said "The door seals are holding up really well" it's not until you get yanked out and open the door you see how bad it is....
