All I use for our kitchen knives are diamond sharpeners and finish off with a ceramic set. I use the same for almost all my knives, some are too big to use so I go back to my dad's and grand dads oil stone block. Still need to make a strop and decent stropping block for them. These are the main 2 I use. Black is a Gerber Field diamond set with bot fine and coarse diamond rods, 2nd is a generic ceramic rod to finish off the edges. Always come back super sharp and almost always touch them up after being cleaned before putting them away.

For some kitchen knive I have one that uses a suction cup and you drag the knife through it
but my butchers knives i have an Arkansas whet stone ans a small piece of jade, then strop
them and put them in a carry pouch, very very sharp.

My Winchester bowie arrived today, just a knife IMO nothing fancy about it.
Again why would you put a Bowie in a nylon sheath is beyond me,[price]

I forgot all about this little fella that was sent to me awhile ago. A Robert Klaas upswept skinner.
A nice, light but sturdy full tang knife and pretty sharp out of the box. Only downside is the handle is a wee bit small, even for me and I have fairly small hands compared to average.

Surprisingly it does have a leather sheath, not the best finish but still leather.
I have had my eye of the smachete for a while now, need to find more reviews on it as I am not convinced yet that it is worth me getting one.
Time will tell :)
