Macca is right people will definitely want a trophy scrub bull.
I was once on a hunt in Sth West QLD on this particular day a mate was after a trophy scrub bull. We caught up with them and my mate hit his chosen bull in the engine room (heart/lung) with his 338 (its a pretty bloody huge calibre). It folded up and dropped stupidly he put down his rifle and started to walk up on it with his video camera, when he got some where between to far from his rifle and dead the mad wounded bull got back up. If it wasn't for 2 really fast accurate shots from another mate with his 30 06 the day would have ended in disaster.
I personally wouldn't initially chase that herd of cattle you have there with out some really experienced hands. Once you have culled/sorted them out then have a play with some less experienced people.

I'd love to help with the cattle not only shoot wild ones but run them through the race. I've branded drenched and scalped ringed and bizezered cattle 5 tines now with our black angus herd about 200 head. We have one wild bull that we need to shoot as he's breeding now . If you're keen mate give me a month notice I'll come for a hunting working trip and bring my bike for muster and a mate or two to help to with scrub bulls. I'm no expert only 5 goes with experienced hand but I love it
