Had a problem very similar to this a few times over the years. As the engine cools down the water contracts creating a pressure drop which then supposedly sucks the coolant back out of the overflow...

this may be frowned upon but IMO the best way to diagnose this is to get a bottle of bars radiator leak (the little chicken poo pellet things). Put that through your radiator system and drive the car...
