What brand is the engine mount? Mine sit close but don;t touch. I would say the mount needs replacing. As for the offset thing. Mine is the same. I put it down to the engine torque doing this.

Im wondering if cooling the fuel affects the injector performance as the fuel surface tension/ thickness/ runnyness is not going to be, normal?
Can you raise the temps for the fuel? Or shut it off completely to test run it so the fuel is at ambient temp? Your theory does sound plausible...
First thing I'd do is replace the fuel filter.
If its only doing this when hot maybe it is a crack or leak in the intake somewhere, as the metal get hot it expands... I had an old XB Ford Falcon...
