Turbo pyrometer

Am fitting a VDO pyrometer kit to a 2001 GU 3.0 Turbo Patrol. Does anyone know what the standard operating temp, and the shit I really need to start worrying temp, should be?

Not sure on STD operating temp but Max would be 500 plus in my books
From all I've read here no two are the same even if running similar boost and other mods
