Rim size confusion and advice

I bought a 1999 4.5L GU ST Wagon and it has the factory steel rims on it, my question is what size are the rims...Ive read 16x7 and 16x7 so a bit confused as to which is right size. It currently has Bridgestone Dueler HT 255/70R/16 fitted, looking at getting something that's more suited to off road and going by the conversations here on the forum the BFG's AT seem to be the most popular choice. At what size would I be looking at getting considering my patrol is stock height and I don't want to throw the speedo out and keep fuel consumption as minimum as possible....thanks.

285/70/16 on 16 x8" rims is about the norm.
rim will have 16 x 8jj stamped on them I would think

EDIT to keep the speedo accurate 265/70/16 would be your choice, they are about a 32"

Just bought from local Bob Jane store 4x BFG 265/70/16 ALL TERRAIN T/A KO with 16x8 Terra steel rims for $420 per corner.
