Interesting indeed they do the same with Barramundi,
take two fillets off the Barra off and replace with fillets of parrot fish.
Then freeze.

SPEWING definitely glued up snot! Tasted good though. I've always thought that the scotch fillet never looked the same as my granddads wen he was a butcher or a mate of mine now I know why and I'm pissed off. Will hae to buy from the local butcher from now on and ask him straight up if it's glued sh1t

A scotch steak should separate like that Growler. It's normally 2 muscles with a bit of fat in the middle of the "join".

What you have a pic of looks right to me, but you had a better look at it of course. Did it separate any more than your pic showed?

Its scary that vid, stuff we are being conned with is beyond belief. All those small bits would normally be gravy beef or lean mince.

Our butcher supplies us whole scotch fillets wrapped in glad wrap then we cut the steaks nice and thick. When wrapped look the same as in the vid but they are the real deal.

Luckily he is from the old school and takes a real pride in his work.

Doesn't surprise me really. Dare say we have all seen the bullray that is passed off as scollaps or leather jacket fillets boiled with crab and mixed in. In the US they used to feed the cattle cement dust in their food in the final weeks to add weight to the carcas.

Australia is one of the last countries where it is still legal to use hormones in beef. It is a natural growth hormone found in beef that is concentrated and implanted just under the skin to release slowly, results are 35% faster growth! Another thing I learnt is that is you feed cattle just grain as in feed lots they will die if turned to pasture later!

I am lucky, I raise my on beef purely on pasture and pasture hay and kill on farm, no meat glue etc here and the meat is fantastic.
