One brake seems to be seizing a bit above my level of knowledge

If its the piston sticking in Calipher, Should be easy enough. Remove offending calipher crimping brake line first.
Remove pistons and smear industrial silicon grease or similar till piston moves in/out freely. You can by a kit to re co
them probably a few "o" rings etc. enough here to talk you through it. not many working parts.

That's what a mate told me its more about knowing if its caused any damage, probably take it out to a mechanic friend of mine so he can teach me. Trying to learn as much as possible

You will very easily see if there has been damage a good tell tail sing would be there is no pad left on one side and just metal to metal, if that is the case would will see the scoring on the disc from where the metal to metal has occurred. You will see as soon as you take the wheel off.
