I`m a bit of a preventative maintenance sort of person, rather than a wait until something breaks.

Been doing some reading and searching, but thought I would ask you more clued up people.

Can I service auto hubs, is there any point and how do I go about it?

Ignoring MPG, what downsides are there to leaving the auto hubs in the locked position, or indeed are there any upsides?

Leaving them in the locked position will have your front drive shaft engaged and spinning as well as your CVs and be costing you money in maintenance and fuel economy as well as a little drag on your motor.

Yes you can service them and stripping and cleaning them and repacking with a quality grease is highly regarded.

I am on my iPhone now but if you do a little searching for "hubs help" you should find an exploded diagram I have posted a number of times of the front diff and hub assembly.
