Veganism is pretty rational, but it's not too hard to transform(rationalize) veganism into an irrational belief system.

That is true to a certain degree, but it is no more true than drinking too much alcohol, chain smoking, drug addiction, eating too much meat, too much carbs, sugar, salt, etc etc.
Vegans have mental illnesses just as anybody else.
Hindus and Sikhs are(meant to be) vegetarians(drinks milk, but no eggs or meat).
It is not too hard to be a vegetarian in western world, 'cos eating eggs is also considered vegetarian(but not in eastern cultures). Since you can consume all the dairy products you won't miss much as a vegetarian in the western world. But vegetarians are generally kidding themselves. Dairy products generally can do far more damage to our health than meat.

Vegan eating is not that hard though. It is the dominant food culture that makes it bit hard. Most supermarkets store a wide range of vegetables, fruits and processed vegan foods. Eating potato chips fried in coconut oil or oilive oil & drink Coca cola everyday is 'vegan', but that will kill you quicker than meat eaters. It is the nutrition that we need to pay attention to. Eating different kinds of vegies, fruits, grains, nuts & seeds is the way to go. Avoiding processed foods as much as we can is also a good idea.
All the above is easily said than done 'cos it involves changing lifetime of habits. This is why many people switch to vegetarianism or veganism revert back to regular meat eating again.
By my first comment, I meant veganism/vegetarianism can replace traditional religion(s) for some people.
People who dumped all the traditional religions and belief systems, the veganism can enter through backdoor as a religious belief system.
Religion = Something irrational we believe in for emotional comfort of existential issues(Life after death, consciousness, etc)
Somebody can be a dedicated vegan by simply believe in the good of it without giving much rational thoughts to it.
The end result can be good, as long as vegan group A & vegan group B try not to kill each other.
I don't think atheist vegans lifestyle can turn them into ugly divisions like organized religions.
I suspect veganism or vegetarianism is evolving(or has already become) to be a new age religion.
I suspect our human brain is pre-wired to be "religious" one way or the other. In other words, if it not the god, a god, gods, spirits, elves, devils, etc, it will be something else. In that sense veganism may not be a bad idea as an alternative organized religion.
Pedantic vegans may end up doing some good for the future of the humanity and 'saving the planet'(figuratively speaking )
