@MB trying to keep the temp with the hood down at about 180, gas burners on either side only for indirect heat
And yes I know I could have scewered the meat a bit better but at least the weight hase been distributed fairly evenly

That's spot on mate!
If you've got a little foil tray or baking tray slide it under and catch all that goodness falling down:-) 5-10mm of water in it too will keep the beef moist and make a ripper gravy. Sweet chilly gravy would be friggin awesome bro!!!!

Ahhh thats the tray under, didn't think of water though, will do it now, cheers for the tip
