Smoker query
I have been using a Webber Smoky Mountain smoker for a while.
Just came back home and noticed that stuff is flaking off from the lid into the water basin. It's basically the wood/charcoal tar flaking.
Just wondering if I should clean the inside of the whole thing or just ignore it.
A full clean will remove the built up smoke flavour from the tar residue..

Yea just scrape off the flakey stuff with a wooden spoon or similar.

I was just going to scrape/brush the loose bits, but I thought I better check with the pros here.

As TD said add to the flavour.
Anyway fired it up today. 1" thick rump. Been sitting in fridge for 24 hrs with rub..
So far 2 hours open smoking. Them about 2 hours in foil and a moist marinade. 1 hour open again with smoke..
So far look good. Smell very nice.
