how can i test the air con in my truck as it wont work at this time

First thing, check the belt, is it on and is it tight? Next check the fuse. After that you need to find out if there is gas in the system but that requires specialist equipment.

Get someone to look at the front of the compressor whilst you press the a/c switch to see if the clutch pulls in. Should see it pull in.

Chech the wire on top of compressor is actually connected and if you you have multi meter, check for continuity.

Behind the RH headlight is the aircon dryer mate, bolted to the top of that is the pressure switch. Turn your aircon on with the engine running and then check for a circuit across those 2 pins and if it does not have continuity then you probably have no gas and everything else will be a waist of time. If that does not engage you have NO CHOICE, time to take it to an aircon man.

My aircon in GU shuts down when engine gets over 100c. Is this a safety thing to stop engine cooking?

Yes it is, it won't stop the engine over heating but it will take some load off the engine and cooling system to reduce over heating.

So its safe to assume that if the engine doesn't make any extra rev's when pushing the A/C button the whole system is bust? (everything is where it should be)

Not always. Most engines will have an idle up system in place that when adjusted properly will see little to no drop in RPM when the A/C cuts in.
If the magnetic clutch on the front of the compressor does not click in when you switch the A/C on with the engine running, then there is a good chance the system is low on gas and the low pressure cut out switch has activated.
If that is the case an A/C specialist will need to inspect the system to find the leak and fix it. Most A/C repairers will want to replace the reciever drier/accumulator when they repair the system (it's good practice to do this). Depending on the age of the system it may also be necessary to retro fit/upgrade the system from R12 refridgerant to the more environmentally friendly R134A.
Then again it may be something as simple as a blown fuse!
