I have done it for a while and can't remember the name of the plugin I used for Photoshop but I have used Photomatix and HDRSoft with excellent results.

What you do is take three photo's of the same subject using three different exposures. The idea is that an over exposed shot will hilight the shadowed area, then the correct exposure and under exposed will balance it out. Some camera's will do the three plus shots if selected. If not just take three different exposures.
You can trial the Photomatix by HDRsoft or buy the basic for $39.

Yeah mate, you can change the level of intensity. Even monochrome (black and white).
