Not too hard mate, some salt, curing salt (preservative) lard and good quality pork plus a reasonably cool place to hang it or plenty of room in a fridge that is kept on its warmest setting.

Day off work, processed some chooks for the freezer and the second calf was born with no issues - now we have 2 steers that will grace the table in about 18 months.
