I was just wondering, if someone tried to steal a mechanical diesel, manual vehicle, would they possibly be able to roll-start it without using the key? Or do they need the key to keep fuel coming?

Fuel cut solenoid needs power to it. Some old injector pumps have an external solenoid with a lever that you could probably push by hand.

done it with the key. still had 8 volts in the battery took 3 ppl. but if you know your way around the engine bay and have some wire yes you could. you would still need to remove the steering lock.
but you could of just hot wired it, be easier

Get yourself a good immobiliser
And msybe a kill switch...... It isnt that hard to remove an ignition barrel and start it with a screw driver
